Carrot Cake

You will require:-
275g organic plain flour - the flourmill at Lower Slaughter produces excellent stone ground flour
1 level spoonful bicarbonate of soda
2 level teaspoonfuls baking powder
1 level teaspoon salt
175g soft, light, brown sugar
50g shelled and chopped walnuts
3 free range, organic eggs – it is, of course, better to purchase from a local farm where you can study the hens and ensure they are living as stress-free a life as possible. A happy egg makes all the difference to the flavour of a cake.
2 ripe bananas, peeled – bananas are often sold under ripe, ensure yours aren’t too hard, nor overripe and squishy.
175g finely, grated John’s Purple carrots
6 fl oz oil – olive oil is too heavy for cake making and you should use a light vegetable oil. I prefer sunflower as they have such happy looking faces.

Forewarn your oven to 180 C, Gas mark 4

Waltz a piece of butter around a 9 inch, round cake tin. Mine’s a heavy based tin from the Elizabeth David range. Ligne the inside of the tin with unbleached baking parchment.

Aerate your flour with the bicarbonate of soda, baking powder and salt, using a metal sieve, into a medium-sized mixing bowl. Introduce the brown sugar, walnuts and eggs into the bowl.

In a separate bowl crush your bananas using a four-prong fork. Introduce to bowl with carrots and oil. Entice together with wooden spoon, enticing for a whole minute in order to procure a soft cake batter.

Pour into awaiting cake tin and ensure surface level. Place in centre of forewarned oven and furnace for an hour. Allow to relax for 5 minutes, then tip, gently, onto wire cooling rack. Leave alone to completely cool down.


Now for the frosting.

75g organic, unsalted butter
75g organic cream cheese
175g icing sugar
Quarter of a teaspoon of Madagascan vanilla essence.

Two finely chopped walnuts - to sprinkle on our finished cake.

Introduce butter and cream cheese to medium mixing bowl. Aerate the icing sugar into the bowl. Introduce the vanilla. Entice together with a wooden spoon. We are endeavouring to produce a soft, creamy texture.

Taking a serrated knife, divide the cake in half, horizontally. Using a palette knife smooth about a third of the frosting onto the exposed surface. Reunite the separated halves. Smooth another third of frosting onto the top of the cake. Smooth the remaining frosting onto the side of the cake. Finally sprinkle with the finely chopped nuts.

Place on Royal Doulton for serving.

A delicious cake to enjoy with your Earl Grey.

Christmas pudding

500g mixed dried fruit (use whatever you like, depending on what you can find. I like to use a mix of cranberries, cherries, apricots, sultanas, and raisins)
100g dates, chopped up
3 tbsp chopped crystallised ginger
125g suet
Zest of 1 orange
125g plain flour
125g caster sugar
150g fresh white breadcrumbs
2 tbsp vin santo or brandy
Handful of chopped nuts, such as pecans, Brazils or hazelnuts
1 medium egg
150ml milk
Golden syrup, to serve
